100% Grass Fed Beef

“Slow and Low”

 With the fat profile being different then your normal meat, if you are heating ground beef to a temperature any higher than 212 F you are in fact turning the protein strands into rubber bands. 
Any protein strand when heated higher then 212 F contracts squeezing whatever moisture/fat out. (Example: when you accidentally overcook the meat and all the water and fat is at the bottom of the pan).
Slow and Low’ is now becoming the recognized way to cook all protein.  Grass fed beef is full of flavor and extremely tender if cooked right. However, the first time you try it, you might be disappointed. The reason is, (I’m guilty), you will cook grass fed beef as if it were the same as conventional grain fed beef.  Not accounting for the leanness of the meat and over cook it

Grass Fed Beef Cooking Tips

1. Lower the cooking temperature. If your grill, oven or stove top is too hot, you will cook off the beneficial fat and dry this beef out quickly. Slow and Low is the way to go with this beef. A general rule of thumb is cut the temperature down by at least 50 degrees. For roasts, cook at 225 degrees or in a crock pot. For steaks, you can sear on medium, but then quickly move to low heat to slowly finish the cooking process.  Unlike grain fed beef which requires a higher searing temperature, grass fed beef will sear on medium.

2. Invest in a meat thermometer. Most people can cook a conventional grain fed steak perfectly just by eyeballing it. But with grass fed beef, there’s less wiggle room because grass fed beef cooks quickly and can go from perfectly cooked to overcooked in less than a minute. Remove it from the heat source when it is 10 degrees below your desired cooking temperature. Don’t worry, it will continue to cook once it’s taken off the grill.

The suggested internal cooking temperatures for grass fed beef are 120 – 140 degrees Fahrenheit (which is lower than the USDAs guidelines for beef which is 145 – 175).  Here’s how the grass feed beef cooking guidelines break down:

  • Rare — 120F
  • Medium Rare — 125F
  • Medium — 130F
  • Medium Well — 135F
  • Well — 140F

Just remember, if you like your meat more on the medium to well done side, make sure you turn the heat way down to allow the meat to cook slowly. Your patience will be rewarded.

3. Let it rest on the counter top for 10 minutes. While your meat was cooking, all the water molecules were heated up and excited. Resting it allows the juices to redistribute. Cutting into it too soon will allow all the moisture to drain out. The result? More moisture on the plate than in your mouth.

4. Start with steaks and roasts that are at room temperature before cooking. Thaw your meat in the refrigerator, or if you are in a hurry, in an air tight bag submerged in cool water. But never thaw it in the microwave. Once it is thawed, allow it to come to room temperature covered on the counter top before cooking. This prevents the meat from being shocked when you put it on the hot surface.

5. Tenderize. One great way to tenderize grass-fed beef is to use a tenderizing marinade.   This basic marinade involves rubbing beef with 2 or more tablespoons of Organic, Unfiltered Extra Virgin Olive oil.  The unfiltered oil contains enzymes that help tenderize the beef and enhance the flavor.  Let the oil soak into the meat for two hours at room temperature (overnight if in the fridge).  For some of the tougher cuts of beef, try a more physical approach.  Cover the beef with plastic and pound your steak a few times to break down the connective tissue. But no need to pulverize it! A few whacks should do the trick.

Defrosting: The “Do’s and Don’ts”

The Dos:

  1.  Refrigerator Thawing –  Simply stick your vacuum packaged steak, roast or ground beef in the refrigerator the night (or at least 8hrs) before you plan to cook your meal.     If you don’t end up cooking the meat, the thawed meat can stay in the refrigerator for 2-3 days with no issues.   BEST OPTION
  2.  Cold Water Thawing – Put vacuum package in cold water only until its thawed.  Change the water a few times until the meat is completely thawed.  ALTERNATIVE OPTION

The Don’ts:

  1. Microwave Thawing –  It will start to cook the outer layer of the meat.  BAD IDEA
  2. Hot Water and/or Room Temperature Thawing –  Do not thaw meat at room temperature.  Meat left at room temperature, even for a few hours, can quickly begin to grow bacteria very rapidly, even if, the center of the steak or roast is frozen (Bacteria can grow on the outer layer of the meat)  NEVER

mRNA Vaccines For Cattle – Fact vs Fiction

Fact: Beaver Brook Ranch does not use mRNA vaccines in their grass fed and finished beef, nor do we use antibiotics or hormones.

Fact: 75-80% of grass-fed beef sold in the US comes from abroad.

Fact: Beef imported into the US from other countries, can be labeled product of the USA if its processed in the US.

Fiction: Farmers and ranchers are required to inject livestock with mRNA vaccines in US.

Fact: There are no mRNA vaccines approved by the FDA for the use in Cattle in America. There are no requirements or mandates by the FDA, USDA or any other govt body to vaccinate cattle (including non approved mRNA vaccines).

Question: Are there approved mRNA vaccines for cattle in other countries? Can those cattle be injected, processed in the US, and labeled as product of the USA? I don’t know the answer to the first question. The second question, is yes.

Is the meat frozen?

Yes.  To lock in the maximum freshness, all of your cuts are flash frozen immediately after butchering, vacuum packaged (stays fresh for 12 months) and frozen when we deliver or you pick up your order.

Do you have a store front and hours of operation?

Yes we do. We sell individual cuts of our beef and pork. We are open every Saturday 9-12pm or by appt during the week (text 908-509-7102 to setup an appt).

Can we tour the Ranch?

Customers can tour Beaver Brook Ranch, on Friday afternoons by appt, when they pick up their order.

Is the meat cut and packaged?

 Absolutely.  Your share package is packaged into individual cuts based on your specification,  vacuum packaged (stays fresh for 12 months) and labeled with the name of the cut.

How do I defrost the steaks, roasts or ground beef?

How long will the cuts keep in the freezer?

At least a year.

Can I cook the cuts “sous vide”  in the vacuum bags? 

The vacuum bags are NOT for cooking.  If you would like to cook in bags, you will need to repacked in cooking version bags.

How long do you Dry Age your premium 100% Grass Fed Beef? 

Dry-aging beef is essentially allowing whole or primal cuts of beef to hang in a humidity controlled environment with a constant flow of air in temperatures between 34 -36 degrees for 2 weeks.

Most Supermarket meat is wet-aged, which means the water/moisture does not evaporate and the meat tends to be tougher.  The customer does not realize that they pay a higher amount per lb due to the “water weight”

Why do this? There are three main benefits to dry aging:

  1. Tenderization as enzymes break down tougher muscles and connective tissues.
  2. Concentration of flavor as moisture is lost. This can also cause substantial weight loss due to decrease in water volume, which is why dry-aged beef can be more expensive.
  3. Increased flavor complexity as fat begins to oxidize and multiple enzymatic and bacterial actions occur. Similar to what happens with wine or cheese.

We dry-age our grass-fed beef for 14 days, which results in what we believe to be the right balance of flavor and tenderness.

My son-in-law recommended me to Beaver Brook Ranch to get the best tasting beef, not only as a treat to enjoy on my taste buds, but also to treat my body to a healthier food source. It has been a wonderful experience to do business with Stefan, owner of the ranch. He is very friendly, an excellent communicator and eager to please his customers. From the first contact ordering our 1/4 share, it gave me the pleasure that I did the right thing in getting the best beef available. The process from placing my order to picking up my share was just a matter of getting it processed by the butcher, which when picking it up was nicely boxed in vacuum sealed packages. All I had to do was to make my initial deposit and wait for an email saying, your share is ready to be picked up. I understand they also provide delivery service.

On the day of pickup, I took my wife and our two very young granddaughters, which were about the same age as Stefan’s 2 little girls and they became instant friends. Stefan took all of us in his vehicle and gave us a private tour of his farm. We even took a nice video of a young calf that was born only a few weeks ago. I am now an advocate of purchasing all of my beef from his ranch instead of from the supermarket. I highly recommend for anyone who is looking into the possibility of making a purchase to make the decision which will not be regretted. We are enjoying the best tasting beef. Go get yours!!!

Grass Fed beef is the best!

When I first received my order (1/4 share in December), my wife rolled her eyes thinking that we really don’t need that much beef. But we never had Grass Fed beef before! I am very pleased with my 1/4 share. Stefan and his father Helmut were awesome to deal with. They answered all my questions regarding what the standard packaging quantities and thickness of the cuts would typically be VS custom. I’m glad I went with the standard. The thickness of the steaks were perfect and the 1 lb packages of chop meat were just right for us. I thought the color and texture of the meat looked so much fresher than store bought. I also like that the meat is verified to be hung a full two weeks. That was one of my deciding factors along with being grass feed that made me choose Beaver Brook Ranch. Everything we tried was was very flavorful and satisfying. One of the first things I noticed is how well the boxes are labled and the quality of the vaccuum packaging. Pork Share is Amazing

Farm to table

First off, Stefan was super helpful, answered all my questions and was very transparent.

Quality of the beef is awesome, slightly different taste as it’s a grassfed grass finished product. Peace of mind that I know where my food is coming from and is local.

I picked up a 1/4 share and its a lot of meat for a family of 3 (well, two adults and toddler). You do get a lot of ground beef, so get creative with meals. There a ton of cuts that I wouldn’t normally buy because of fear of preparing it but it helps open my culinary skills at home to at least give it a shot.

Stefan also gave me a tour of the ranch, got a cool cowboy hat also!

Highly recommend Beaver Brook Ranch. Great prices, local to NJ, PA and NY.

Far superior

Stefan and family do a superb job of delivering a quality far beyond expectations. Meat is perfectly aged and butchered in neat, vacuum sealed bags. We let the butcher decide our cuts and were not disappointed!

The ground meat makes excellent chili, burgers or meatloaf far above anything you’ll find in a supermarket or buying club. Steaks are perfectly trimmed and ready to go right after defrosting, just add salt and pepper. We’ve smoked a couple of the bigger cuts and find the meat is far tastier with no need to add much in the way of spices or sauces.

Few things to note if you’ve never bought bigger portions or dry aged before: The meat loses some weight during the dry aging process (read: you get less) but gains flavor and texture well worth a few ounces. Also, don’t overcook or use high heat, this stuff is the real deal and the quality is noticeable. Take your time and enjoy the aroma of cooking real, grass fed beef.

A must for anyone concerned about their food. The family has lengthy experience raising animals. Now if they only sold the perfect wine to go with it…. 🙂

Very Good Beef.

This is our first ever grass-fed ranch experience. I am a health/fitness professional and was looking for a healthy source of grass-fed beef for my family for the health benefits. This is it. First of all, the cuts of meat are beautiful. You are not going to believe how RED this meat is! It makes the grocery store beef look sort of sad and anemic by comparison. This is probably what beef is supposed to look like… Secondly, our family did a side-by-side taste comparison of the sirloin steak with the equivalent grocery store cut (on the grill, with garlic salt and pepper) and the flavor on the Beaver Brook steak was noticeably better. Not only that, but working with Stefan, who promptly and pleasantly answered all my questions along the way was great. Good experience all around- looking forward to enjoying all that beef!

I can eat it!!

Odd title I know, but I don’t have many teeth and beef is the hardest thing for me to chew. I love beef but don’t get to enjoy it. Just picked my half share yesterday. Already ate a bone in ribeye and a pound of ground beef. IT WAS ABSOLUTELY PHENOMENAL! I’m a big steak consumer shopping around for USDA Prime ribeyes all the time and this topped those by far. Above and Beyond!

My son and I recently had to give up corn and all products with corn in them! This has been no easy feat as I have found out corn seems to sneak it’s way into everything! I was going crazy trying to find safe beef 100 percent grass fed that was safe for us including the processing of the animal. All while needing to know the animals are treated with love and kindness. I think my entire perspective on eating meat has changed.

I’ve wanted to shift to eating grass fed beef for many years, especially after reading the Pollan book. But the availability of locally raised meat seemed mysterious. I finally searched in earnest and came across Beaver Brook. I called Stefan and went out to the farm and met Helmut who walked me through the whole process. I visited the pastures (gorgeous and lush) and saw the work they’re doing to create a humane and high quality environment for the cattle. We talked about the problems with modern farming and what the diet and medications can do to the animals. I even talked at length with the butcher about the finishing process and what kind of options are available – they were really patient and accommodating with my curiosity. I was impressed and put in for a 1/2 share.

I couldn’t be happier. Every time we have a meal with the meat, I have never, EVER felt better after eating it. It’s kinda weird because I don’t feel like passing out on the couch. Or heavy and lethargic and bloated and borderline comatose. I honestly feel great. The taste is terrific and the diversity of cuts make for a lot of cooking options. I think I get it now and I’m not really that interested in any other kind of beef.

Long drive, but scenic and worth it

We have had two orders so far. First was delivered via UPS, but we decided to pick up the second because of possible carrier delays and the incentives added for pick up. It is a long ride (about 2 hours) but it was very scenic and you really get to see the contrast of what rural North Jersey and rural South Jersey look like. The beef is always great! I learned about Beaver Brook from a friend and was definitely intrigued. But I had never bought in bulk like this or even a 1/4 cow! Every part of this was incredible! First learning about the various cuts and working with the Farm to determine how I would like my cuts (in case you are interested, I like thick steaks, prepare bone out sirloin and ground beef instead of beef cubes). I received such an incredible amount of wonderful meat! The delivery was smooth, easy and friendly. But MOST importantly, it is sooo delicious! Everything else would have fallen away if this wasn’t the best beef I have tasted. It will take me awhile to make my way through this but I am already planning when to get back on the list for my next order. I suggest you do the same.

Our History/Background:

Prior to starting Beaver Brook Ranch, my father and I had a 330 acre ranch in Meredithville, VA (in the boondocks) about 1.5 hr south of Richmond,where we had a herd of Black Angus breeders (mom cows) that had a calf each year. When we bought the ranch in VA in the mid 2000’s, we didn’t have a clue about what we were doing.

A fellow farmer helped show us the ropes and for the first few years we were excited to raise our own calves. The breeders would “calf” in the spring and the calves would nurse on their mothers for 6 or so months and be on grass permanently for another 3 months thereafter. At around 9 months 450-600lbs, the fellow farmer would bring our calves, along with his calves, to the auction and we would get a check in the mail from the sale barn, which was pretty cool, since we started the ranch from scratch with out knowing much about ranching etc.

Being new to the whole ranching thing, we never looked below the surface to find out exactly where our calves were ending up. Just about the time, the word “Grass Fed” was becoming a popular term among the main stream consumer, around 2011-2013, my father and I started reading more and more about the commercial beef supply chain and asking more and more questions to fellow farmers about how the whole thing works. We knew we were delivering calves that were 100% Grass Fed, but what led us to ultimately build Beaver Brook Ranch, was our lack of control from the time the calves left our ranch to when they ended up on someone’s dinner table.

100% Grass Fed Beef

Commercial Beef Supply Chain:

Phase 1: Cow/Calf Operation: (What we were doing prior to Beaver Brook Ranch.)

Raising calves until 9 months and selling at the sale barn(auction). Ranchers get paid extra if the calves are exposed/trained to eat corn/grain prior to delivery (many times the calves would get sick at the time of corn/grain intro and have to be fed antibiotics) and if the calves were injected with hormone implants behind the ear (help them grow more quickly), the rancher would get paid an extra $10. We never bothered with either, that said, this wasn’t our main source of income so I can’t say we wouldn’t have back then, if this was our only source of income.

Phase 2: Sale Barn(Auction)

The calf drop off would occur a day or two before the actual auction. The sale barn had corrals setup and each ranch would be given a designated pen. We were a small timer compared to some of the cow/calf operators who had weekly deliveries and 100s of calves. Every Tuesday, the sale barn would have auctions and buyers would come and bid on the calves. At this point, in the process, the calves are called feeders. Some of the female calves “heifers” were sold as replacement heifers/breeders to cow/calf operators but most of heifer and steer calves went as feeders to ranchers who owned either intermediate ranches (feed the calves from 600-900 lbs) or to the calf’s final destination, feedlots.

Phase 3: Feedlots

The majority of calves purchased at the auction, are hauled by the tractor trailer load, to commercial feedlots, where they will live in stock pens and fed/fattened up with a mixture of corn and other grains. You seen the pictures, so enough said.

Phase 4: Slaughterhouse/Processing/Wholesale Distributors

Once the cows reach peak weight, they move on to the next stage which may be up to three separate stops. The slaughterhouse where the cows are brought down to the hanging carcass “hanging weight” , the butcher/processor where they are cut up into individual retail cuts and moved on to wholesale distributors who sell the individual cuts to grocery stores and restaurants etc. Some of your larger retailers have their own wholesale buyer/division who will buy direct from the processors.

I think you get the point, there are a lot touch points involved before it ends up in your refrigerator/freezer.

Pretty Disgusting!

If you don’t think the beef your are getting from your grocery store comes from places like this, think again. Don’t fall for the cute “certified black angus” emblem on the deli counter. There are lots of “certified black angus” sitting in their own filth, gobbling down corn, grain and other things you shouldn’t being eating.

If you want full transparency behind the food you are feeding your family, start by asking the question, “where is my food coming from”, and find local farms around you, that you can actual visit and see with your own eyes and answer the question for yourself.

It’s the only way to start changing our food supply chain and the health of our country.

As far as our contribution:

It’s pretty simple.  In the Spring thru Fall, we rotate our herd daily through out 15 pastures, and give them fresh water every day.  In the winter, we feed the herd hay that is grown on the ranch.  When they reach 24-28 months, we drive them to our local, USDA inspected, they are humanely harvested, the butcher ages the beef for 14 days, and custom cuts them, based on the customer’s specifications, into steaks and roasts, vacuum packages each cut with the name of the cut and the weight.
