• 1 Flank*, 1 Skirt*, 2 Flat Iron Steaks*
• 1 Bavette (Flap) Steak*
• 1 Bottom* and 1 Eye Round Roast **
• 2 London Broil **
• 3-4 Boneless Chuck Roasts*
• 1 Cross Rib (Rolled)/Pot Roast*
• 1 Half Brisket (Flat or Point)*
• 2 Short Rib Packs – (3 Ribs Per Pack)*
• 4-5 Osso Buco (Shin/Shank)*
• 5 Stew Cube (1lb packs)*
• 35 Ground Beef Packs (1 lb packs) – This will vary by a few pounds +/- to bring the total weight to 100 lbs
• Extras Optional (No Charge):  Soup and Marrow Bones, Liver, Heart, Kidney, Tongue

*  On Butcher Sheet:  Any cut above can be added to ground beef*  and certain roasts** can be cut into minute steaks (1/16″)
